When he isn’t kneading bread, owner Niel Koep turns out small batches of French-style pastries (from $1/piece) throughout the day, keeping his glass bakery cases filled with a rotating assortment of glistening sweets. Among Fendu’s best pastries are the bostock (brioche dipped in almond), the pear and chocolate danish, the Italian pear tea cake, the sour cream pound cake and the extra chocolatey chocolate chip macadamia cookies. Koep takes a culinary detour from the French stuff with his incredible oven-fired pizzas and artisan deli sandwiches. The pizzas, which come in two sizes — 8-inch ($7.50-$10.50) and 14-inch ($12.50-$17) — are Koep’s masterpiece. As a bread expert, he’s created the perfect crust: a thin and chewy bottom crust with thick, bready edges. It’s the best of both crust worlds. Lovers of thin crust get to have their toppings unhampered by a thick bed of bread, while bread lovers have something to chew on. Koep gets creative with his toppings, but he doesn’t go crazy. He keeps his pizza classy, which is why it doesn’t seem out of place to be able to order pizza at this boulangerie.
