Fougass

The first time we walked in, they were offering samples of fougass, described as a Mediterranean flatbread brushed with olive oil. It looked more like a giant baked pretzel, given its odd shape. Wikipedia tells us that fougass is sometimes sculpted to look like an ear of wheat. Whatever the shape, we decide we like it because it provides more crisp surface area to a well-flavored bread.
