Koep loves to talk about his breads, but with Hawaii's sweet tooth, it's the pastries that constantly need restocking. Fendu sells 500-600 breakfast pastries (croissants, danishes, scones) a day. All the pastries are made in-house, as opposed to being from frozen, pre-packaged dough. What also makes them taste so good is the use of European-style butter, which is more flavorful and has a higher butterfat content.
