Crepe cake at town
Credit:Melissa Chang
It's a crepe. It's a cake. No, it's a crepe cake! Town's pastry chef, Chris Sy, has taken to making one of the most labor-intensive pastries known to French bistros: crepe cake ($7/slice). Sy’s version is made from 12 stacked crepes with a whipped cream filling, and is served with stewed plums. You can taste the labor of love in every bite — the delicate, yet rich cake takes five hours to make. But don't go running to town thinking you can always get this treat; we were lucky enough to eat there on a day when Chris had the time to make it.
