Wonton, beef tendon and stewed beef noodles

Run, don’t walk to this stall at the makai end of the food court. You’ll be distracted by the Hong Kong-style tarts and cookies on the counter (we’ll get to those later), but look up at the pictures of noodle dishes on the wall.
Rainbow’s wontons fill your senses with the aroma of sesame oil at the first bite, and the minced pork filling has that all-important Chinese quality of bouncing back against the teeth. Stewed beef and tendon are redolent of star anise, but you could happily bounce your teeth off a simpler bowl of wonton, noodles and extra choy sum.
