Pat bab (iron pot rice)

This one totally fooled us. No bells or whistles, no sign of garlic or chilies. It’s pure, simple comfort: white and brown rice cooked in an iron pot with red beans and huge, soft chunks of pumpkin and sweet potato. The waitress scoops it into your bowl, pours tea into the scraped-out pot, lets it sizzle and soften the crispy rice stuck to the sides, and ladles out the hot, soothing gruel to finish off with your ban chan.
We thought iron pot rice would be too boring for Metromix. But on a cold, rainy night when we were under the weather, this was the dish we couldn’t get off our brain.
