Pudae chige (poor man’s stew)
Credit:Mari Taketa
It came as a vision from hell: this huge boiling cauldron was set on a live flame at our table. Wasn’t that instant ramen sitting on top? And hot dogs? What else was in this frightening redness? Kim chee, mandoo, bean sprouts, Smokies breakfast sausages, Spam, and lots and lots of kochujang red pepper.
This one is five-alarm. It’s our new addiction. Koreans laugh when we tell them we love pudae chige. Pudae means "army." It’s totally true to its origins. Go for it.
