The live-music lineup (Cazimero Brothers, Jerry Santos, Hapa's Nathan Aweau and the Makaha Sons) is so stellar it almost eclipses the food. Chef-owner Chai Chaowasaree made his name in town with Singha Thai Cuisine. For Chai's, which opened in 1999, he applied his expertise with multi-layered Southeast Asian cooking to Pacific ingredients and European flavors to create his signatures such as kataifi-mac-nut-crusted prawns, grilled mongolian lamb chops, duck breast in a spicy port demiglace, and mahimahi in a red Thai curry sauce. This is where to come to impress a date - someone you're really in to. You'll clean out your wallet, but where else can you eat food this good and hear some of the best Hawaiian musicians on the Islands? On Friday and Saturday nights, Chai's turns into a nightclub in the late hours.
