Like Shige's Saimin Haven, Nakai Saimin on Nuuanu Avenue makes its noodles in-house. They also make the same thin noodles as Shige's, which is not so coincidental considering the owners of the two restaurants are related. Although Nakai and Shige's serve virtually the same noodles, we prefer Nakai's saimin because of its superior dashi. Don't let Nakai's lighter broth fool you. It's still packed with fish flavors, but without being salty. Made with aku and four kinds of vegetables (the owner wouldn't share what they were), those of you with allergies will be happy to know Nakai doesn't use shrimp in its dashi.
